6:00am. Production staff arrives. Opens tablet, selects "Daily Pre-Start Cleaning" checklist. Works through 12 items: floors swept, drains cleaned, equipment sanitized, hand wash stations stocked. For each item, takes photo showing result. At 6:42am, reviews all items complete, signs digitally. Checklist auto-submits. CCP Monitoring with Photo Proof

Cooking smallgoods batch #2401. Reach target internal temp 71°C. Staff member opens "Cooking Log" checklist on tablet, scans batch code QR label, enters actual temp (71.2°C) and time (63 minutes at temp). Takes photo of probe showing 71.2°C reading. Digital signature confirms reading accurate. System validates against FSANZ cooking matrix (71°C for 60+ min = pass). Record auto-saves with full traceability.

Incoming Goods Verification Offline
